The founder of PoppyseedNYC, chef Si Yoon Giles, grew up in Seoul, Korea. While earning a Master’s degree in music at Yonsei University in Seoul, Korea, Si Yoon developed a passion for the culinary arts, leading to her studies at The Institute of Culinary Education in New York City. After working at many renowned restaurants, cafes, bakeries, and a catering company in Manhattan, Maryland, and Seoul, Si Yoon developed an interest in baking and developing unique brunch menus for restaurants.
In 2015, while developing a brunch menu for a restaurant in Brooklyn, Si Yoon became interested in the Paleo lifestyle, a diet consisting primarily of meat, fish, vegetables, and fruit, which excludes dairy and processed foods. She has since experimented with and developed various Paleo recipes, specializing in baked goods using Paleo-friendly ingredients, such as almond, coconut, and cassava flours. With a mission to expand the Paleo lifestyle to delicious baked goods, PoppyseednNYC strictly uses Paleo-friendly, organic, natural, unprocessed, and unrefined ingredients. In addition to granola, PoppyseedNYC will be offering additional Paleo baked goods such as scones and cookies. PoppyseedNYC does not add sugar to any of its baked goods. Organic maple syrup is the only sweetener used in its products.
The Paleo diet is believed to be a nutritional approach to maintaining a lean, healthy, and energetic lifestyle. Although there is wide variability in the way it is interpreted, the Paleo diet strictly excludes the consumption of processed foods, refined flours, and sugars, and encourages consumption of naturally and organically grown foods such as vegetables, fruits, nuts, and seeds.
All of PoppyseedNYC's baked goods are made to order using only the highest quality Paleo-friendly ingredients, including almond, coconut. and cassava flours, unrefined coconut oil, organic maple syrup, cacao powder, and “Superfoods”, such as dried mulberries, goji berries, chia seeds, flax seeds, and matcha powder. All ingredients are organic, vegan, grain-free, soy-free, and dairy-free.
Although PoppyseedNYC has developed a number of Paleo baked goods, it is continuing to develop more baked goods using ingredients that conform to the Paleo lifestyle. So please stay tuned.
